I can remember my Grandma making these lovely almond buns when I was a child. In fact, walking into her house you were always greeted with the aroma of delicious Cornish baking - yeast buns, seed buns, saffron cake, heavy cake, pasties and pies - she always seemed to have something cooking! Ahh, wonderful childhood memories...!
Grandma's Almond Buns
- shortcrust pastry to line bun tins
- 2 oz caster sugar
- 2 oz icing sugar
- 2 oz ground almonds
- 2 oz ground rice
- 1 whole egg
- 1 egg white
- a few drops almond essence
- strawberry jam
Line bun tins with the pastry.
Spread base of each pastry case with a teaspoonful of jam.
Mix ingredients together to form a paste and spread carefully over the jam.
Bake in the middle of a preheated oven at approximately 200C (Gas 6) for 20 mins or until golden brown.
