West Country Apple Cake

Something I made for the first time recently. Delicious smothered with a 'gurt big dollop' of Cornish clotted cream!


Heat oven to 180C/350F/Gas4

Peel, core and chop the apples and roll in the lemon juice. Rub margarine into the flour until it resembles fine breadcrumbs. Stir in 4oz of the brown sugar, all the chopped apple, and the beaten egg. Add just enough milk to give a soft, dropping consistency. Transfer to the tin.

Mix the remaining sugar with the cinnamon and sprinkle over the top of the cake mixture in the tin.

Bake for 45-50 mins, until firm to the touch. Cool for 10 mins in the tin, then transfer to a wire rack.

Then prepare to make the next one, as this cake doesn't last long!
